What Men Tsuyu Is

There are multiple noodle dishes in Japan: Soba, Udon, Somen, and Ramen noodles. Majority of Japanese noodles are cooked as noodle soup. Soup for soba, udon, and somen is called men tsuyu. Men is noodle, and tsuyu is soup. Basically, it is made from dashi, shoyu, and mirin.

<Ingredient>

  • Dashi – 1 cup
  • Shoyu – 2 tbsp
  • Mirin – 1 tsp

Dashi (Japanese Soup Stock) – Japanese Kitchen in the US

Shoyu (Japanese Soy Sauce) – Japanese Kitchen in the US

Mirin – Japanese Kitchen in the US

<Preparation>

  1. Shimmer dashi.
  2. Add shoyu and mirin to 1 and boil for 30 seconds.
