What Is Dashi
Dashi is Japanese soup stock that is used to make miso soup, noodle soups, sauces, and other traditional Japanese dishes.
This is usually made from bonito flakes, dried kelp, or dried sardine or combination of these.
You can buy dashi power at Japanese and Asian grocery stores.

If you put some dashi powder in boiled water, it makes dashi.
Many Japanese people use dashi powder these days.
How to Make Dashi
If you are interested in homemade dashi, here’s the recipe:
<Ingredient>
- Water – 2 cups
- Dried kelp – 5 inches
- Bonito flake – 1 cup


<Preparation>
- Soak dried kelp in water for 15 minutes or longer up to overnight.
- Heat 1 in a pan and take the kelp out before it boils.
- Put bonito flake in the pan and boil it for a couple of minutes.
- Remove from the heat and leave it until bonito flake sinks.
- Strain the soup stock with fine-mesh sieve.
